no, Mirror Entity only changes the types of creatures already in play. Conspiracy on the other hand will change the creature types of spells you control.

How does what Mirror Entity says act differently from say, Dauntless Escort, which allows creatures not yet played to become indestructible? I think there's something basic and fundamental I'm not seeing in the difference here.

What you're not seeing is that you are confusing the meaning of "creatures not yet played". Dauntless Escort does not make the creatures inside your deck indestructible, it makes creatures which come into play that turn indestructible. The cards inside your deck or in your hand do not become indestructible until and unless they come into play.
Have you considere adding Venser, the Sojourner? Blinks for free pretty much and lets you vindicate AND exile with a simple scarecrow! Another card could be Ghostway for massive board wiping
