Probably the two most popular ones:
Linkin Park and Jay Z's great mashup Collision Course:
And underground rap producer DangerMouse's brilliant Jay Z and Beatles mashup, The Gray Album:
And there's also Kanye West mashed up with The Beach Boy and a load of other stuff involving Radiohead, more Jay Z, and many bridged genres and riffs.
Recently I just checked out these mashups:

This really is 50 Cent mashed up with Queen.
(Check out 50 Cent's Freddie Mercury 'stache. :D)
It's called "Q-Unit: The Hits", and it's actually pretty cool...Not as good as some of the better mashups, Jay Z and Linkin Park, Kanye West and the Beach Boys, and of course, the awesome Gray Album Jay Z and Beatles mashup.
But it's still amusing and refreshing, 50 Cent rapping his verses over Queen's riffs and backup vocals.
"This Is How We Do" and "Another One Bites The Dust" become "This Is How We Bite The Dust"
"In Da Club" and "We Will Rock You" become "We Will Rock You In Da Club"
And etc for eleven amusing and weird tracks...
Some of them are weird and awkward, some funny, some spot on awesome.
P.S., do not even get me started about the unbelievable chaos and madness of the mashup between "Bohemian Rhapsody" and "Wanksta" into "Bohemian Wanksta".
P.S., "This Is How We Bite The Dust" is just soooo funky fresh.
Frankly, the ultimate mashup of 2005 and one of the best songs on 2005 came from a mashup...of a mashup...:D Layered, off Dr. Dre's mixtape "Dretox".
It's called "Numb Encore"
It's Jay Z and Linkin Park's Collission Course mashup "Numb Encore", of their songs "Numb" and "Encore", combined with Eminem's great song "Encore", which features Dr. Dre and 50 Cent.
So the song is basically:

Well I am BIG fan of Linkin Park, so when I herd about a album mash up with JayZ another Artist I enjoyed listening to I just had to buy the album, my favorite by far is numb/encore although dirt off your shoulder/lying from you is pretty awesome as is faint/jigga what.
As for this Q-unit album defiantly gonna check out, as 50 cent and Queen are both artists that are cool in my books as I am very much into rap/hip hop as I am into rock.

This is how we bite the dust, I don't know how to explain it, it just flows really smoothly. I don't listen to much rap, but this caught my attention.
Yeah, I wasn't kidding when I said it was funky fresh...
It's not perfect, but it just hypnotizes me into randomly dancing all funkily, even if I'm typing, or eating, or trying to play basketball, or washing the dishes, I just get down if I hear that song.

It's really worth it, while Jay Z's braggadocio and subject matter may be annoying, his skill is undeniable, he doesn't even rehearse or write lots of his stuff, he just freestyles his verses on the spot on a lot of his songs, which is quite amazing, compared to like, Nas for example.
And "The Gray Album" rocks.

My favorite mashup is probably MF DOOM with Music Producer Madlib as for that whole Q Unit thing all I can say about that is "..................."......
There's also American Edit, which is a mashup of American Idiot with a variety of songs. There seems to be some difficulty getting off the Web at the moment, but you should be able to find in torrent form somewhere. Worth a listen for the Wonderwall/Boulevard of Broken Dreams track.
I've been playing the Grey Album pretty much non-stop over the last few weeks. The best is Julia + Dirt off ya Shoulda.
My favorite mashup is probably MF DOOM with Music Producer Madlib as for that whole Q Unit thing all I can say about that is "..................."......
That's technically not a mashup though, TRM...
Stuff like MF Doom making albums with DangerMouse and Madlib are collaborations, no material is being "mashed up".

I hate rap, but I actually like Numb/Encore.... I've known about it for a while now.
One to definately check out is Boulevard of Broken Songs AKA the Boulevard of Broken Dreams/Wonderwall mashup that has some Travis and Eminem thrown in. It swept the nation when it was released like crazy. You can hear it here.
